We wanted to offer our foodie friends a high quality balsamic vinegar to compliment our olive oils. After traveling throughout Modena, Italy, we discovered Acetaia Malpighi and loved their legacy and vinegars so much that we knew this was the balsamic for Bondolio.
The Malpighi family are true artisans of balsamico, creating fine vinegars and dressings that are extremely versatile for a gourmet cooks. Their family recipes and passion have been handed down through five generations.
Saporoso is intense and well-balanced. Created from a family recipe, it begins with a slow squeeze of the Trebbiano and Lambrusco grapes and is then cooked over direct heat in an open vessel. It’s then gently matured for at least six years in refined Durmast barrels. Despite is dark color and and incisive fragrance, Saporoso is light and well-suited for vegetables and grilled or roasted proteins.
