Roasted Potatoes with Olive Oil & Sea Salt
I love anything with potatoes, I cook them in many different ways. This particular recipe I made up by just experimenting. I am sure if you were to look up this recipe you would find it in many different sites with lots of alternative directions to follow, it is such a quick and easy recipe to prepare. You can make this in any quantity depending on how many folks you are having for dinner but I figure from experience that one large potato per person normally is enough, I always throw in a few extra just in case anyone wants left overs.
Ingredients:
Yukon Gold Potatoes peeled and sliced thin
Bondolio Extra Virgin Olive Oil
Sea Salt
Heat oven to 350 degrees. Put the sliced Potatoes on a cookie sheet and coat both sides of the potatoes with olive oil. Place in the oven and cook for about 1 hour. After an hour if the potatoes are still not done, turn the oven up to 400 degrees until one side has turned brown and then flip them over until the other side has turned brown. If you have a lot of folks for dinner you may have to prepare two trays. One tray always seems to get done faster than the other so just trade shelves if one tray is getting done more quicker than the other. As soon as they are nice and brown (some will get really crispy) take out of oven and sprinkle with Sea Salt, serve immediately as they taste better hot, just like fries.
